A History: Beyond Rice and Tofu
Seven years ago, I had only just begun to think about a different career. Back then, food blogging was starting to get big. I had been following many, many blogs for a couple of years but none of them fit me and my family's lifestyle just right. So, like so many others, I started my own blog - Beyond Rice and Tofu. I wanted to show people that you could have celiac disease ("Beyond Rice") and eat well on a plant-based diet ("Beyond Tofu").
I blogged regularly for quite a few years but I knew that blogging was not a career option for me. After much hesitation, I took a leap of faith and quit my job to go back to school to become a dietitian.
Now that I am settled as a clinical dietitian and have a bit of experience under my belt, I have opened my own nutrition counseling business in order to help the people I initially set out to help - people with celiac disease and non-celiac wheat sensitivity - essentially those on a gluten-free diet. (My practice is not limited to those with these disorders. If you are looking for assistance, please contact me and we'll see if we're the right fit!)
As I work to build content on this new website and blog, I encourage you to take a look at Beyond Rice and Tofu for some gluten-free and vegetarian foodie inspiration. As time allows, I will pull in some of the older recipes you will find there as well as introduce you to some of our new favorites. You will notice that the most recent post is quite old, but still delicious! Please forgive the not-so-fabulous food photography, I've improved a bit, but not much! Also, if you are interested, you will find my "celiac journey" story in the About section.
